This will be Peter’s last visit to the shop for 2015! It’s perfect timing to get your knives ready for holiday cooking and carving. Peter is obsessed (he admits this himself!) with sharpening knives and does all his sharpening by hand with Japanese water stones of varying grits. He will treat a clunky old Henckel knife with as much care and attention as a high-end handmade work-of-art knife, and the results are astonishing.
